Judith Beto, PhD, RD is a member of the Board of Trustees of the American Kidney Fund (AKF).  In addition to serving as Chair of the Education Committee, Professor Beto serves on the Minority Intervention & Kidney Education (MIKE) Committee, Patient Scholarship Committee, and the Patient Services Committee.

Professor Beto, of Oak Brook, Ill., is a professor of Nutrition Sciences and the director of the Didactic Program in Dietetics at Dominican University in River Forest, Ill.  She has been an active participant in the renal community, serving on a number of state and national boards while also holding positions with many other renal related organizations.  The founder and first editor of the Journal of Renal Nutrition and a prominent writer whose work has been published in dozens of books and medical journals, Professor Beto is the recipient of countless awards for recognition of distinguished service and educator excellence.
